Make that a four woman cleaning crew extraordinaire. Sometimes 5 member (if we were lucky). In reality that fifth member was the only cleaning extraordinaire of the bunch. Still is.

The Count of Monte Cristo? Bing? These are things I did NOT know. But I'll watch P&P with you ANYtime.

Ha i love it...have a wonderful recipe for you to try thanks to Mrs. Ray on our fav. food channel (PS you would be great on the show!!)

Ingredients:

1 cup sweetened, shredded coconut
Or you can use coconut milk (I prefer the light)
2 1/2 cups chicken stock or broth, divided
1 cup long grain white rice or brown rice
1 teaspoon salt
2 tablespoons canola oil
1 red bell pepper, seeded and thinly sliced
1 fresh red chili, seeded and thinly sliced or 1/2 teaspoon red pepper flakes
3 cloves garlic, finely chopped
2 pounds jumbo shrimp, peeled and deveined or sliced chicken tenderloins
1 to 1 1/2 teaspoons fish sauce
or 2 to 3 tablespoons soy sauce (skip if watching salt intake)
2 cups (a couple of handfuls) basil, fresh and chopped or ripped
Zest and juice of 1 lime

Toast the coconut in a pan, until is becomes just a little brown. (Take out a little for garnish) Add chicken stock, coconut, salt and bring to a boil with rice.

In frying pan or wok, heat oil until it begins to simmer, not smoke. Add shrimp or slices of chicken tenderloins. Cook for just a few minutes, add sweet and hot peppers, garlic, basil. Cook stirring often for just a few more minuets. Right before you remove it to serve, add fish sauce or soy sauce.

Dish up and add limejuice over plate, scoop rice to the side of dish as garnish with zest of lime and the rest of the toast coconut. ENJOY!!
You can put as much basil as you want!!

What on earth is bing? And I support the Nascar dream...even though I don't like watching all of the left hand turns! ha ha!
